Aged Release Semillon
Wine
de iuliis Aged Release Semillon is made with fruit handpicked at lower sugar levels and higher acidity than usual, essential to creating a wine able to withstand the test of time.
As is traditional for Hunter Valley Semillon, the juice ferments in stainless steel with a neutral yeast, allowing the character of the fruit to shine. Once bottled, the wine is cellared in a temperature controlled cellar for several years before release.
Pale yellow, de iuliis Aged Release Semillon retains youthful citrus flavours and acidity alongside toasty, honeyed aged complexity. Cellaring potential is five years.
